Vegatable foods that help prevent Diseases

Spinach (Spinacia oleracea) - is a flowering plant in the family Amaranthaceae, native to central and southwestern Asia. It is an annual plant (rarely biennial), which grows to a height of up to 30 cm. Spinach may survive over winter in temperate regions. The leaves are alternate, simple, ovate to triangular-based, very variable in size from about 2-30 cm long and 1-15 cm broad, with larger leaves at the base of the plant and small leaves higher on the flowering stem. The flowers are inconspicuous, yellow-green, 3-4 mm diameter, maturing into a small hard dry lumpy fruit cluster 5-10 mm across containing several seeds.

Spinach is a rich source of iron. In reality, a 60 gram serving of boiled spinach contains around 1.9 mg of iron (slightly more when eaten raw). A good many green vegetables contain less than 1 mg of iron for an equivalent serving.

Spinach also has a high calcium content. However, the oxalate content in spinach binds with calcium decreasing its absorption. By way of comparison, the body can absorb about half of the calcium present in broccoli, yet only around 5% of the calcium in spinach. Oxalate is one of a number of factors that can contribute to gout and kidney stones. Equally or more notable factors contributing to calcium stones are: genetic tendency, high intake of animal protein, excess calcium intake, excess vitamin D, prolonged immobility, hyperparathyroidism, renal tubular acidosis, and excess dietary fiber (Williams, 1993).

Boiled Spinach
Spinach still has a large nutritional value, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A, vitamin C, vitamin E, vitamin K, magnesium, and several vital antioxidants. Recently, opioid peptides called rubiscolins have also been found in spinach. It is a source of folic acid, and this vitamin was first purified from spinach. To benefit from the folate in spinach, it is better to steam it than to boil it. Boiling spinach for four minutes can halve the level of folate.
Broccoli
Broccoli was an Italian vegetable, as its name suggests, long before it was eaten elsewhere.
Broccoli is a cool-weather crop that does poorly in hot summer weather. Other cultivar groups of Brassica oleracea include: cabbage (Capitata Group), cauliflower (Botrytis Group), kale and collard greens (Acephala Group), kohlrabi (Gongylodes Group), and Brussels sprouts (Gemmifera Group). Chinese broccoli (Alboglabra Group) is also a cultivar group of Brassica oleracea. It is usually boiled or steamed, but may be eaten raw and has become popular as a raw vegetable in hors-d'oeuvre trays. It is high in vitamin C and soluble fiber and contains the multiple nutrients with potent anti-cancer properties including diindolylmethane and selenium. The 3,3'-Diindolylmethane found in broccoli is a potent modulator of the innate immune response system with anti-viral, anti-bacterial and anti-cancer activity. Broccoli also contains the compound glucoraphanin, which can be processed into an anticancer compound sulforaphane, though the benefits of broccoli is reduced if the vegetable is boiled. A high intake of broccoli has been found to reduce the risk of aggressive prostate cancer.

Broccoli is rich in sulforaphane, an antioxidant linked with a reduced risk of a number of cancers, especially lung, stomach, colon and rectal cancers. "The phytonuirients in broccoli help detoxify carcinogens found in the environment, They also have anti-inflammatory properties, and we know that an important factor in reducing the risk of disease is to decrease inflammation"
How to eat more? Saute broccoli florets with shallots and pine nuts, and drizzle with lemon juice; steam broccoli rabe and toss with a honey-mustard dressing.

I think we have to be careful in a situation where Vitamin D insufficiency is almost epidemic not to overstate the dangers of excess Vitamin d3.
It takes 40,000iu daily for a number of months of vitamin d supplementation to raise status from current levels around 50-75nmol/L to over 350nmol/l when adverse events start being recorded.
While we only use between 3000-5000iu vitamin d daily most of use would benefit from between 1000-2000iu/d and the newly proposed upper safe level of 10,000iu/d leaves an ample safety margin.
